Homemade granola bars

I’ve been working at a very large company since January, since the campus is large and quite a drive from town, there are cafeteria’s spread out between the buildings. I was quite excited by them when I first started work, now, after having my gall bladder removed I realize that the food isn’t as healthy as I first thought so my choices are limited because I have to watch the fat content in my meals. With that in mind, I’ve been growing frustrated and tired of my limited breakfast choices of Oatmeal or a toasted bagel and have been yearning for something different.

For some reason I’ve been thinking of things like homemade granola or those little Starbucks’ Aussie Bites, both of which need to be eaten in moderation because of the calories. I’ve found two recipes that sound like potential Aussie Bite impersonators the first is on a website named Group Recipes, Aussie Bites, the second is on a blog called 101 Cookbooks, Anzac Cookies Recipe. I’m going to ponder these two recipes until I write my grocery list on Friday.

For my homemade granola experiment I’m going to use Nigella Lawson’s Chocolate and Peanut Granola recipe from the Food Network site. I thought it was ironic when I stumbled upon her breakfast episode this weekend the granola debate ended when I saw this delicious looking granola.
